SALT RIVER PIMA-MARICOPA INDIAN COMMUNITY, Ariz. (Sept. 30, 2016) — October is a time to celebrate in the Valley — not only because the temperatures are finally falling, but also because it is National Seafood Month. Ocean Trail at Talking Stick Resort, the only restaurant offering an authentic taste of New Orleans right in the heart of Scottsdale, is celebrating October with a variety of fresh seafood dishes prepared Creole style.

Located mere steps from all the hotel’s gaming action, Ocean Trail was named the Best Seafood in Phoenix by the Phoenix New Times and was included among the nation’s best Cajun food by AZ Food and Wine. The kitchen offers a vast range of New Orleans-themed dishes, including Louisiana gumbo loaded with shellfish, pan roasts simmered with seafood and of course, the infamous crawfish étouffée — tender crawfish tails smothered in a rich tomato sauce. All of the dishes can be prepared on a customizable spiciness scale ranging from 1-10.

In celebration of National Seafood Month, Chef Thomas Freimuth has shared his delicious shrimp boil recipe. After guests sample the dish at the property’s intimate 19-seat seafood bar, they can recreate it in the comfort of their own kitchens.

CAJUN SHRIMP BOIL (Yields one serving)


3/4 lb.                         26-30 shrimp, peeled & deveined

1 cup                           White wine

1 tbsp.                         Lemon juice

1 tbsp.                         Chopped shallot

2 tsp.                           Chopped garlic

¼ cup                          Trinity (diced onion, celery, green pepper)

¼ tsp.                          Cayenne pepper (or to taste)

1/2 tsp.                        Blackened seasoning

1 tbsp.                          Whole butter

Pinch                             Chopped chives 

2 ea.                              Lemon wedges

To taste                         Salt


Put all ingredients (except butter) in small pan and bring to a boil. When the shrimp are cooked, remove the pan from the heat and swirl in the whole butter. Check seasoning and adjust as necessary. Serve in a bowl and garnish with chopped chives and lemon wedges.
